Formally known as our Jaguar Blend. Inspired by one of America’s earliest ventures into powered flight, this coffee honors Augustus Herring’s bold leap from the sandy shores of Silver Beach in St. Joseph, Michigan, on October 11, 1899. Much like Herring’s pioneering spirit, this honey-processed Tarrazú coffee is the product of vision, precision, and a passion for pushing boundaries.
Sourced from small farms in Costa Rica’s Tarrazú region—where the average farm spans just three hectares—this coffee is meticulously selected for ripeness and processed with care. The honey method preserves the fruit’s natural sugars during drying, resulting in an exceptionally sweet and complex cup. This craft process starts with the strict selection of perfectly ripe cherries, once the coffee is depulped the mucilage is left on allowing the natural sugars to enhance the coffee's sweetness. The coffee is then dried on African beds or patios, allowing the coffee to dry in a slow and even way. With layered notes of chocolate, nectarine and guava, a silky body, and a clean finish, it’s a tribute to those who dare to take flight.
